Ingredients
- 1 (14-ounce) bag of coleslaw mix (shredded cabbage and carrots)
- 1/2 cup mayonnaise
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 jalapeño, finely diced (remove seeds for less heat)
- 1/2 teaspoon Cajun seasoning
- Salt and black pepper, to taste
Instructions
- In a large mixing bowl, whisk together the mayonnaise, honey, apple cider vinegar, Dijon mustard, diced jalapeño, and Cajun seasoning until smooth.
- Add salt and black pepper to taste.
- Add the coleslaw mix to the bowl and toss until evenly coated with the dressing.
- Refrigerate for at least 30 minutes before serving to let the flavors meld.
- Serve chilled as a side dish.
Notes
- For less heat, remove the seeds and membrane from the jalapeño or use only half.
- Add more honey if you prefer a sweeter slaw.
- This slaw pairs great with grilled meats or sandwiches.
- Use a homemade Cajun seasoning blend for more control over the spice level.
