Description

This Cajun Shrimp and Rice Skillet is a quick, one-pan dinner packed with bold Cajun spices, juicy shrimp, and fluffy rice. Perfect for a flavorful weeknight meal that comes together in just 30 minutes.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked long grain white rice
  • 2 1/4 cups chicken broth
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Toss shrimp with 1 teaspoon of Cajun seasoning, paprika, salt, pepper, garlic powder, onion powder, thyme, and red pepper flakes. Add shrimp to the skillet and cook for 1-2 minutes on each side until pink and cooked through. Remove shrimp from skillet and set aside.
  3. In the same skillet, add diced peppers and onion. Sauté for 3-4 minutes until tender.
  4. Add garlic and cook for another minute until fragrant.
  5. Stir in uncooked rice and remaining 1 teaspoon of Cajun seasoning. Cook for 1-2 minutes to lightly toast the rice.
  6. Pour in chicken broth, stir to combine, and bring to a boil.
  7. Reduce heat to a simmer, cover, and cook for 15-18 minutes until rice is tender and liquid is absorbed.
  8. Return shrimp to the skillet and stir to combine. Heat through for 1-2 minutes.
  9. Garnish with chopped parsley or cilantro before serving.

Notes

  • You can adjust the heat by increasing or omitting the red pepper flakes.
  • Use pre-cooked shrimp for an even faster meal; just add them at the end to warm through.
  • This dish works well with brown rice, but adjust cooking time accordingly.
