These Cajun Shrimp Bowls are a flavorful and easy dinner idea featuring spicy shrimp, fluffy rice, sautéed bell peppers, and a creamy remoulade sauce. Perfect for a quick weeknight meal with bold Southern flavors.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 2 cups cooked white rice
- 2 tablespoons mayonnaise
- 2 teaspoons Creole or Dijon mustard
- 2 teaspoons ketchup
- 1 teaspoon prepared horseradish
- 1/2 teaspoon hot sauce
- 1/4 teaspoon smoked paprika
- 1 teaspoon lemon juice
- Salt and black pepper, to taste
Instructions
- In a medium bowl, toss the shrimp with Cajun seasoning until evenly coated.
- Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until opaque and cooked through. Remove shrimp from the skillet and set aside.
- In the same skillet, add the bell peppers and red onion. Sauté for 5-7 minutes until softened and slightly charred. Season with salt and pepper to taste.
- In a small bowl, whisk together mayonnaise, mustard, ketchup, horseradish, hot sauce, smoked paprika, lemon juice, salt, and pepper to make the remoulade sauce.
- To assemble, divide the cooked rice into bowls. Top with sautéed vegetables and shrimp. Drizzle with remoulade sauce and serve immediately.
Notes
- Adjust the level of Cajun seasoning to suit your spice preference.
- Serve with brown rice or cauliflower rice for a healthier option.
- The remoulade sauce can be made ahead and stored in the fridge for up to 3 days.
