Ingredients
For the Bread:
-
2 cups all-purpose flour
-
1 ½ teaspoons baking powder
-
½ teaspoon baking soda
-
½ teaspoon salt
-
1 teaspoon ground cinnamon
-
¼ teaspoon ground nutmeg
-
½ cup unsalted butter, softened
-
¾ cup granulated sugar
-
¼ cup brown sugar
-
2 large eggs
-
1 teaspoon vanilla extract
-
½ cup sour cream or plain Greek yogurt
-
2 cups peeled and chopped apples (e.g., Granny Smith or Honeycrisp)
For the Caramel Glaze:
-
½ cup brown sugar
-
¼ cup unsalted butter
-
2 tablespoons milk or heavy cream
-
½ teaspoon vanilla extract
-
Pinch of salt
Instructions
-
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
-
In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
-
In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
-
Beat in eggs one at a time, then stir in vanilla and sour cream (or Greek yogurt).
-
Gradually add the dry ingredients to the wet mixture, mixing just until combined.
-
Fold in the chopped apples.
-
Pour the batter into the prepared loaf pan and smooth the top.
-
Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan for 10 minutes, then transfer to a wire rack.
-
To make the glaze, combine brown sugar, butter, and milk in a small saucepan over medium heat. Bring to a boil, stirring constantly. Boil for 2 minutes, remove from heat, and stir in vanilla and a pinch of salt.
-
Let glaze cool for 5 minutes, then drizzle over cooled bread.
Notes
-
Best apples to use: Granny Smith, Honeycrisp, or Fuji for a balance of tart and sweet.
-
Bread keeps well in an airtight container at room temperature for up to 3 days.
-
You can add ½ cup chopped pecans or walnuts for a crunchy twist.
-
For a thicker glaze, allow it to cool slightly longer before drizzling.
