Ingredients
- 2 cups (250g) all-purpose flour (spoon & leveled)
- 1/2 cup (100g) packed light or dark brown sugar
- 2 and 1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (1 stick or 115g) unsalted butter, frozen
- 1/2 cup (120ml) heavy cream, plus more for brushing
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 heaping cup (about 130g) peeled and chopped apple (about 1 medium apple)
- Coarse sugar, for topping (optional)
- 1/2 cup (120ml) store-bought or homemade salted caramel sauce
Instructions
- Preheat oven to 400°F (204°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Whisk the flour, brown sugar, baking powder, cinnamon, and salt together in a large bowl.
- Grate the frozen butter using a box grater. Add it to the flour mixture and combine using a pastry cutter, two forks, or your hands until the mixture comes together in pea-sized crumbs.
- Whisk 1/2 cup heavy cream, the egg, and vanilla extract together. Pour over the flour mixture and mix until everything is moistened.
- Fold in the chopped apples. Try not to overwork the dough.
- Work the dough into a ball on a floured surface and press into an 8-inch disc. Cut into 8 wedges and place on the prepared baking sheet.
- Brush scones with a bit of heavy cream and sprinkle with coarse sugar if using.
- Bake for 22–25 minutes or until golden brown. Remove from the oven and cool for a few minutes.
- Drizzle the cooled scones with caramel sauce before serving.
Notes
- Scones are best enjoyed the day they are made but can be stored at room temperature for 2 days or refrigerated for 5 days.
- You can freeze baked scones (without caramel drizzle) for up to 3 months.
- Use tart apples like Granny Smith or sweet varieties like Honeycrisp for best flavor.
