Ingredients

1 cup unsalted butter

1 cup granulated sugar

1 cup brown sugar

4 large eggs

1 tsp vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 tsp baking powder

1/4 tsp salt

For the Cheesecake Layer:

3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1/2 cup sour cream

For the Caramel Sauce:

1 cup granulated sugar

6 tbsp unsalted butter

1/2 cup heavy cream

1 tsp vanilla extract

Pinch of salt


Instructions

  • Preheat oven to 325°F (163°C). Grease and line a 9-inch springform pan with parchment paper.

  • Prepare the brownie layer:
    Melt butter in a medium saucepan over medium heat. Once melted, remove from heat and stir in granulated sugar and brown sugar. Add eggs and vanilla extract, mixing until well combined.
    In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually fold into the wet ingredients. Pour brownie batter into the prepared pan and smooth the top.
    Bake for 20-25 minutes or until a toothpick comes out mostly clean (a few moist crumbs are fine). Let cool slightly.

  • Prepare the cheesecake layer:
    Beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
    Pour cheesecake mixture over the cooled brownie layer and smooth the top.
    Bake for 45-50 minutes until the center is set but slightly wobbly. Turn off the oven and leave the cheesecake inside for 1 more hour.
    After cooling, refrigerate for at least 4 hours or overnight.

  • Make the caramel sauce:
    Heat sugar in a medium saucepan over medium heat, stirring until it melts and turns amber. Add butter, stirring until melted. Carefully add heavy cream, whisking until smooth. Stir in vanilla extract and salt. Let cool.

  • Assemble:
    Once the cheesecake is chilled, drizzle the homemade caramel sauce over the top. Slice and serve.
