Description

This Caramel Cheesecake Ice Cream Dessert combines the creamy richness of cheesecake with the sweet indulgence of caramel, all in a refreshing frozen treat. A crunchy graham cracker crust, creamy cheesecake ice cream filling, and gooey caramel sauce make it perfect for any occasion.

Ingredients

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 cup butter, melted

2 cups cream cheese, softened

1 1/2 cups heavy cream

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup caramel sauce (plus extra for drizzling)

1/2 cup crushed graham crackers (optional, for topping)

Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch pie pan or a springform pan to form an even crust. Place it in the freezer while you prepare the filling.
  2. Make the cheesecake filling: In a large bowl, beat the softened cream cheese until smooth. Add the heavy cream, powdered sugar, and vanilla extract. Continue to beat until the mixture is well combined and smooth.
  3. Layer the dessert: Pour the cheesecake filling over the chilled graham cracker crust, spreading it into an even layer. Drizzle the caramel sauce over the top of the filling and use a knife to swirl it gently into the mixture.
  4. Freeze: Cover the dessert and freeze for at least 4 hours, or until firm.
  5. Serve: Before serving, drizzle additional caramel sauce over the top and sprinkle with crushed graham crackers if desired. Slice and enjoy!

Notes

  1. For a chocolate lovers version, add chocolate chips or a chocolate drizzle on top.
  2. For a nutty crunch, sprinkle chopped nuts like pecans or almonds on top before freezing.
  3. Top with fresh fruit, such as strawberries or raspberries, for a tangy contrast to the sweetness.
  4. Can be made ahead of time, up to 1-2 days in advance.
  5. Store leftovers in the freezer for up to 1-2 weeks for best taste and texture.
