Description

A rich and savory vegan pasta dish featuring caramelized onions and sautéed mushrooms, perfect for a cozy dinner. This simple yet flavorful recipe brings out the natural umami of mushrooms and the sweetness of slow-cooked onions.


Ingredients

  • 250g pasta of choice
  • 2 large onions, thinly sliced
  • 250g mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp vegan butter
  • 1 tsp balsamic vinegar
  • 1 tbsp soy sauce
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil and vegan butter in a large pan over medium heat.
  3. Add the sliced onions and cook for 20–25 minutes, stirring occasionally, until caramelized and golden.
  4. Add the garlic and cook for another 1–2 minutes until fragrant.
  5. Add the mushrooms and cook for 8–10 minutes until browned and softened.
  6. Stir in soy sauce and balsamic vinegar, cook for 2 more minutes.
  7. Season with salt and pepper to taste.
  8. Add the cooked pasta to the pan and toss everything together until well combined.
  9. Serve warm, garnished with fresh parsley if desired.

Notes

  • Use any pasta variety like spaghetti, fettuccine, or gluten-free as needed.
  • Add a splash of pasta water if the mixture seems too dry.
  • For extra creaminess, a spoonful of vegan cream cheese can be mixed in.
