Ingredients

  • 12 oz spaghetti
  • 3 large yellow onions, thinly sliced
  • 6 cloves garlic, minced
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large skillet, heat olive oil and butter over medium heat.
  3. Add sliced onions and salt, cooking slowly for 20–25 minutes, stirring occasionally, until deeply caramelized and golden brown.
  4. Add minced garlic and red pepper flakes, cooking for 1–2 minutes until fragrant.
  5. Add the cooked spaghetti to the skillet along with reserved pasta water. Toss well to combine.
  6. Stir in grated Parmesan cheese and black pepper. Mix until the sauce lightly coats the pasta.
  7. Remove from heat and garnish with fresh parsley if desired. Serve immediately.

  • Cook onions low and slow for best caramelization and flavor.
  • Add a splash of white wine while cooking onions for extra depth.
