Ingredients
- 12 oz spaghetti
- 3 large yellow onions, thinly sliced
- 6 cloves garlic, minced
- 3 tbsp olive oil
- 2 tbsp butter
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 1/2 cup reserved pasta water
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (optional)
Instructions
- Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
- In a large skillet, heat olive oil and butter over medium heat.
- Add sliced onions and salt, cooking slowly for 20–25 minutes, stirring occasionally, until deeply caramelized and golden brown.
- Add minced garlic and red pepper flakes, cooking for 1–2 minutes until fragrant.
- Add the cooked spaghetti to the skillet along with reserved pasta water. Toss well to combine.
- Stir in grated Parmesan cheese and black pepper. Mix until the sauce lightly coats the pasta.
- Remove from heat and garnish with fresh parsley if desired. Serve immediately.
Notes
- Cook onions low and slow for best caramelization and flavor.
- Add a splash of white wine while cooking onions for extra depth.
- Use gluten-free pasta if needed.
