Description
This Cardamom Coffee Cake is a tender, buttery cake infused with warm cardamom spice and topped with a crunchy brown sugar and cardamom streusel, perfect for pairing with your favorite cup of coffee or tea.
Ingredients
- 2 cups (250g) all-purpose flour
- 1 tablespoon ground cardamom
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (240g) sour cream
- 1/2 cup (120ml) whole milk
- 1/2 cup (100g) light brown sugar (for streusel)
- 1/4 cup (30g) all-purpose flour (for streusel)
- 1 teaspoon ground cardamom (for streusel)
- Pinch of salt (for streusel)
- 2 tablespoons (28g) unsalted butter, melted (for streusel)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square baking pan.
- In a medium bowl, whisk together flour, ground cardamom, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Mix in the sour cream until fully incorporated.
- Alternately add the dry ingredients and milk to the wet ingredients, beginning and ending with dry ingredients. Mix until just combined.
- Pour half the batter into the prepared pan and smooth the top.
- In a small bowl, combine all streusel ingredients and mix until crumbly.
- Sprinkle half of the streusel over the batter in the pan.
- Add the remaining batter and smooth the top. Sprinkle the rest of the streusel on top.
- Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 15–20 minutes before serving.
Notes
- For a stronger cardamom flavor, increase the spice slightly in the batter or streusel.
- Use room temperature ingredients for better mixing and texture.
- This cake stores well at room temperature for up to 3 days or can be frozen for longer storage.
