Description
Buttery, spiced shortbread cookies with a fragrant orange glaze, perfect for tea time or holiday treats!
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2 tablespoons freshly squeezed orange juice
- 1/2 teaspoon orange zest
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, beat the butter, powdered sugar, and granulated sugar until light and creamy.
- Add vanilla extract, then sift in the flour, cardamom, and salt. Mix until a soft dough forms.
- Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Cut into desired shapes using cookie cutters.
- Place cookies on the prepared baking sheet and bake for 12-15 minutes, or until the edges are just lightly golden.
- Let cookies cool completely on a wire rack.
- For the glaze, whisk together powdered sugar, orange juice, orange zest, and vanilla extract until smooth.
- Drizzle or spread the glaze over the cooled cookies. Allow to set before serving.
Notes
- Ensure butter is properly softened for easier mixing.
- Chilling the dough for 15–20 minutes can help with cleaner cuts.
- Store cookies in an airtight container for up to 5 days.
