Description

A refreshing carrot apple salad made with crisp apples, shredded carrots, and a light, tangy dressing. Perfect as a healthy side dish or quick lunch addition.

Ingredients

  • 2 cups shredded carrots
  • 1 large apple, julienned or grated
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1/4 cup raisins
  • 2 tablespoons chopped walnuts (optional)
  • Pinch of salt

Instructions

  1. Wash, peel, and shred the carrots. Julienne or grate the apple.
  2. In a small bowl, whisk together the lemon juice, honey, mayonnaise or Greek yogurt, and salt until smooth.
  3. In a large mixing bowl, combine the shredded carrots, apple, raisins, and walnuts if using.
  4. Pour the dressing over the salad and toss well to coat evenly.
  5. Refrigerate for at least 15 minutes before serving to allow flavors to meld. Serve chilled.

Notes

  • Use Greek yogurt instead of mayonnaise for a lighter option.
  • To prevent browning, toss the apple with lemon juice immediately after cutting.
  • Add sunflower seeds or pecans for extra crunch.
  • Store in an airtight container in the refrigerator for up to 2 days.
