Ingredients
- 2 cups shredded carrots
- 1 large apple, julienned or grated
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 2 tablespoons mayonnaise or Greek yogurt
- 1/4 cup raisins
- 2 tablespoons chopped walnuts (optional)
- Pinch of salt
Instructions
- Wash, peel, and shred the carrots. Julienne or grate the apple.
- In a small bowl, whisk together the lemon juice, honey, mayonnaise or Greek yogurt, and salt until smooth.
- In a large mixing bowl, combine the shredded carrots, apple, raisins, and walnuts if using.
- Pour the dressing over the salad and toss well to coat evenly.
- Refrigerate for at least 15 minutes before serving to allow flavors to meld. Serve chilled.

- Use Greek yogurt instead of mayonnaise for a lighter option.
- To prevent browning, toss the apple with lemon juice immediately after cutting.
