Description

These no-bake Carrot Cake Energy Balls are a healthy and easy snack made with wholesome ingredients like carrots, oats, dates, and nuts. They’re naturally sweetened, vegan, and perfect for meal prep or on-the-go snacking.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup shredded carrots
  • 1/2 cup pitted Medjool dates
  • 1/2 cup walnuts
  • 1/2 cup unsweetened shredded coconut
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Add the oats, walnuts, coconut, cinnamon, nutmeg, ginger, and salt to a food processor and pulse until finely ground.
  2. Add the shredded carrots, dates, chia seeds, maple syrup, and vanilla extract to the mixture in the food processor.
  3. Blend until the mixture becomes sticky and starts to come together. Scrape down the sides as needed.
  4. Scoop out portions of the mixture and roll into balls using your hands.
  5. Store the energy balls in an airtight container in the fridge for up to 1 week or freeze for longer storage.

Notes

  • If your dates are dry, soak them in warm water for 5–10 minutes before using.
  • You can use a mix of nuts like pecans instead of just walnuts.
