Description

These Carrot Energy Balls are a healthy, sweet, and nutritious snack packed with natural energy from dates, walnuts, and carrots. Perfect for a quick bite or a wholesome treat.


Ingredients

  • 2 medium carrots, grated (150 g)
  • 12 medium dates, pitted (120 g)
  • 1 cup walnut halves (110 g)
  • ½ cup almonds (80 g)
  • ⅓ cup desiccated coconut (40 g)
  • 1 tsp cinnamon powder
  • 1 pinch salt
  • Extra desiccated coconut for coating

Instructions

  1. In a food processor, combine the grated carrots, dates, walnut halves, almonds, desiccated coconut, cinnamon powder, and salt.
  2. Process until the mixture forms a sticky, dough-like consistency. If the mixture is too dry, add water 1 teaspoon at a time until it comes together.
  3. Roll the mixture into small balls about 1 inch in diameter.
  4. Roll each ball in extra desiccated coconut to coat evenly.
  5. Place the energy balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Store in an airtight container in the refrigerator for up to 1 week.
  • You can substitute pecans or cashews for walnuts if preferred.
  • Add 1 tablespoon chia seeds or flaxseeds for extra fiber.
