Ingredients
- 2 medium carrots, grated (150 g)
- 12 medium dates, pitted (120 g)
- 1 cup walnut halves (110 g)
- ½ cup almonds (80 g)
- ⅓ cup desiccated coconut (40 g)
- 1 tsp cinnamon powder
- 1 pinch salt
- Extra desiccated coconut for coating
Instructions
- In a food processor, combine the grated carrots, dates, walnut halves, almonds, desiccated coconut, cinnamon powder, and salt.
- Process until the mixture forms a sticky, dough-like consistency. If the mixture is too dry, add water 1 teaspoon at a time until it comes together.
- Roll the mixture into small balls about 1 inch in diameter.
- Roll each ball in extra desiccated coconut to coat evenly.
- Place the energy balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up before serving.
Notes
- Store in an airtight container in the refrigerator for up to 1 week.
- You can substitute pecans or cashews for walnuts if preferred.
- Add 1 tablespoon chia seeds or flaxseeds for extra fiber.
- If the mixture becomes too sticky, chill it for 10 minutes before rolling.
