Description
Crispy homemade pizza-flavored crackers made with cassava flour, olive oil, and herbs. These gluten-free crackers are vegan, paleo-friendly, and perfect for snacking.
Ingredients
- 1¼ cups (180g) cassava flour
- 1/4 cup (24g) golden flaxseed meal (optional)
- 1/2 teaspoon fine Himalayan salt
- 1/2 teaspoon garlic powder (optional)
- 1/8 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 3 teaspoons dried oregano (optional)
- 6 tablespoons (78g) olive oil
- 8 tablespoons (108g) water
- 1 tablespoon (20g) tomato paste (optional)
Instructions
- Preheat the oven to 300°F (150°C).
- In a large bowl, mix together the dry ingredients: cassava flour, flaxseed meal, salt, garlic powder, baking soda, cream of tartar, and dried oregano.
- In a separate bowl, whisk together the olive oil, water, and tomato paste until combined.
- Add the wet ingredients to the dry ingredients and mix to form a dough. Start with a spatula and then use your hands until the dough comes together.
- Place the dough between two sheets of parchment paper and roll it into a thin square about 1/8-inch thick, ensuring it is evenly rolled.
- Slide the rolled dough with parchment paper onto a baking sheet. Using a pizza cutter or knife, cut the dough into approximately 1-inch squares.
- Bake for 40 minutes. Remove from the oven, separate the crackers slightly on the pan, and bake for an additional 15 minutes to remove excess moisture and crisp them.
- Remove from the oven, sprinkle with extra salt and oregano if desired, and allow to cool before serving.
Notes
- Flaxseed meal, garlic powder, oregano, and tomato paste are optional but add extra flavor and texture.
- Roll the dough evenly to ensure the crackers bake uniformly and become crisp.
- If thicker areas remain, they may need a few extra minutes of baking.
- Store crackers in an airtight container at room temperature or in the refrigerator to maintain freshness.
