Description

These crispy cassava flour pizza crackers are a flavorful gluten-free snack with hints of garlic, oregano, and tomato. They are vegan, paleo-friendly, and perfect for dipping or enjoying on their own.


Ingredients

  • 1¼ cups (180g) cassava flour
  • 1/4 cup (24g) golden flaxseed meal (optional)
  • 1/2 teaspoon fine Himalayan salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 3 teaspoons dried oregano (optional)
  • 6 tablespoons (78g) olive oil
  • 8 tablespoons (108g) water
  • 1 tablespoon (20g) tomato paste (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large bowl, mix together the cassava flour, flaxseed meal, salt, garlic powder, baking soda, cream of tartar, and oregano.
  3. In a separate bowl, whisk together the olive oil, water, and tomato paste.
  4. Combine the wet and dry ingredients and mix until a dough forms. Start with a spatula, then use your hands to fully bring the dough together.
  5. Place the dough between two pieces of parchment paper and roll into a thin square about 1/8-inch thick, keeping the thickness even. Transfer the parchment with the dough onto a baking sheet and cut into 1-inch squares using a pizza cutter or knife.
  6. Bake for 40 minutes. Remove from the oven, space the crackers apart on the pan, and bake for an additional 15 minutes to remove excess moisture.
  7. Sprinkle with extra salt and oregano if desired. Allow to cool and store in an airtight container at room temperature or in the refrigerator.

Notes

  • For extra flavor, add additional dried herbs such as basil or thyme.
  • If you prefer a thinner cracker, roll the dough slightly thinner than 1/8 inch.
  • Ensure crackers are spaced apart during the second bake to help them crisp evenly.
