These crispy cassava flour pizza crackers are a flavorful gluten-free snack with hints of garlic, oregano, and tomato. They are vegan, paleo-friendly, and perfect for dipping or enjoying on their own.
Ingredients
- 1¼ cups (180g) cassava flour
- 1/4 cup (24g) golden flaxseed meal (optional)
- 1/2 teaspoon fine Himalayan salt
- 1/2 teaspoon garlic powder (optional)
- 1/8 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 3 teaspoons dried oregano (optional)
- 6 tablespoons (78g) olive oil
- 8 tablespoons (108g) water
- 1 tablespoon (20g) tomato paste (optional)
Instructions
- Preheat the oven to 300°F (150°C).
- In a large bowl, mix together the cassava flour, flaxseed meal, salt, garlic powder, baking soda, cream of tartar, and oregano.
- In a separate bowl, whisk together the olive oil, water, and tomato paste.
- Combine the wet and dry ingredients and mix until a dough forms. Start with a spatula, then use your hands to fully bring the dough together.
- Place the dough between two pieces of parchment paper and roll into a thin square about 1/8-inch thick, keeping the thickness even. Transfer the parchment with the dough onto a baking sheet and cut into 1-inch squares using a pizza cutter or knife.
- Bake for 40 minutes. Remove from the oven, space the crackers apart on the pan, and bake for an additional 15 minutes to remove excess moisture.
- Sprinkle with extra salt and oregano if desired. Allow to cool and store in an airtight container at room temperature or in the refrigerator.
Notes
- For extra flavor, add additional dried herbs such as basil or thyme.
- If you prefer a thinner cracker, roll the dough slightly thinner than 1/8 inch.
- Ensure crackers are spaced apart during the second bake to help them crisp evenly.
