Ingredients
Ground beef (80/20 is ideal for a juicy filling)
Shredded cheddar cheese
Eggroll wrappers
Onion, finely chopped (optional)
Garlic powder
Onion powder
Salt and pepper
Olive oil (for frying)
Instructions
- In a skillet over medium heat, cook the ground beef, breaking it apart with a spatula until fully browned. If you’re adding onions, toss them in and sauté until softened.
 - Season with garlic powder, onion powder, salt, and pepper. Stir to combine, then remove from heat.
 - Lay an eggroll wrapper on a clean surface. Place a spoonful of the beef mixture in the center of the wrapper and top with a generous amount of shredded cheddar cheese.
 - Roll the eggroll tightly, folding in the sides as you go to seal the filling inside.
 - Heat olive oil in a deep pan or skillet over medium-high heat. Once the oil is hot, carefully place the eggrolls into the oil, frying in batches until golden and crispy, about 2-3 minutes per side.
 - Remove the eggrolls from the oil and let them drain on a paper towel-lined plate to remove excess oil.
 - Serve with your favorite dipping sauces like ketchup, mustard, or ranch.
