Ingredients
- 1 pound ground beef
- 1 cup carrots, shredded
- 1 cup celery, chopped
- 1 small onion, chopped
- 3 cups potatoes, peeled and diced
- 3 cups chicken broth
- 1/4 cup flour
- 1/4 cup butter
- 2 cups milk
- 2 cups cheddar cheese, shredded
- Salt and pepper to taste
- Optional: cooked bacon bits and chopped green onions for garnish
Instructions
- In a large pot, cook ground beef over medium heat until fully browned. Drain excess fat and set beef aside.
- In the same pot, sauté onions, carrots, and celery until tender.
- Add the cooked beef back into the pot along with the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10-12 minutes.
- In a separate saucepan, melt butter over medium heat. Whisk in flour to create a roux and cook for 1-2 minutes.
- Slowly whisk in milk and cook until the mixture thickens.
- Stir the milk mixture into the soup pot. Cook for another 5 minutes, then add shredded cheddar cheese. Stir until cheese is fully melted and soup is creamy.
- Season with salt and pepper to taste. Serve hot and garnish with bacon bits and green onions if desired.
