Ingredients

  • 12 oz semi-sweet or bittersweet chocolate chips
  • 6 tablespoons unsalted butter, cubed
  • ¾ cup granulated sugar

  • ¼ cup unsweetened cocoa powder
  • ⅓ cup cornstarch
  • ½ teaspoon salt
  • 1 cup mini semi-sweet chocolate chips

For the cheesecake layer:

  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 egg, room temperature
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F. Lightly spray a 9-inch square baking pan and line with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, melt chocolate chips and butter in 30-second microwave intervals, stirring between each, until fully melted and smooth.
  3. Stir in sugar and vanilla until well combined.
  4. Add eggs, one at a time, mixing well after each addition.
  5. In a small bowl, whisk together cocoa powder, cornstarch, and salt. Gradually add to the wet ingredients, mixing vigorously for 1-2 minutes until smooth and the batter starts pulling away from the bowl sides.
  6. Stir in mini chocolate chips.
  7. Pour two-thirds of the brownie batter into the prepared pan and smooth the top. Set the remaining batter aside.
  8. For the cheesecake layer: Beat cream cheese until light and fluffy. Add sugar and beat until combined. Beat in egg and vanilla extract until smooth.
  9. Spread the cheesecake layer evenly over the brownie batter.
  10. Spoon or drizzle the remaining brownie batter over the cheesecake layer.
