Ingredients
1 pint of fresh strawberries, washed and hulled
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1/4 cup sour cream
2 tbsp heavy cream
Optional: crushed graham crackers, chocolate shavings, or fresh mint for garnish
Instructions
- Begin by washing and hulling the strawberries. Slice a small portion off the bottom of each strawberry to make them stand upright. Using a paring knife, carefully hollow out the center of each strawberry, being sure not to pierce the sides.
 - In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
 - Add the powdered sugar, vanilla extract, sour cream, and heavy cream to the cream cheese mixture. Continue mixing until everything is well combined and smooth.
 - Use a piping bag or a spoon to fill each hollowed strawberry with the cheesecake mixture. Be generous, filling each one to the top.
 - If desired, garnish with crushed graham crackers, chocolate shavings, or fresh mint for an extra touch of flavor and decoration.
 - Serve immediately, or refrigerate until ready to serve.

- This recipe yields about 12-15 stuffed strawberries, depending on the size of the berries.
 - The cheesecake filling can be made ahead of time and refrigerated for up to 1 day.
