Ingredients
2 cups cooked rice (white or brown)
2 cups fresh broccoli florets, steamed
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1/2 cup bread crumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or lightly spray with non-stick cooking spray.
- In a large bowl, combine the cooked rice and steamed broccoli. Stir to mix them together evenly.
- In a separate bowl, mix together the cream of mushroom soup, milk, 1 1/2 cups of shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Pour the soup mixture over the rice and broccoli. Stir well to combine.
- Spread the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
- If desired, sprinkle the bread crumbs over the cheese layer for a crunchy topping.
- Bake for 25-30 minutes, or until the casserole is hot and bubbly and the cheese on top is melted and golden.
- Remove from the oven and let it cool slightly before serving.
