Description
A creamy, cheesy Cajun garlic chicken rotini skillet made with tender chicken, pasta, and a rich three-cheese sauce. Perfect for a comforting and flavorful weeknight dinner.
Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized chunks
- 12 oz rotini pasta
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 1 tbsp butter
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Add chicken to skillet and cook until browned and fully cooked, about 6–7 minutes. Remove from skillet and set aside.
- In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
- Stir in chicken broth and heavy cream, then bring to a simmer.
- Add mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.
- Add cooked rotini and chicken back into the skillet.
- Toss everything until well-coated in the cheesy Cajun garlic sauce. Let simmer for 2–3 minutes to blend flavors.
- Garnish with parsley and serve hot with extra cheese on top if desired.
Notes
- For extra spice, add more Cajun seasoning or a pinch of cayenne pepper.
- Use penne or fusilli pasta as an alternative to rotini.
- Substitute half-and-half for heavy cream for a lighter sauce.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
