Description
A comforting and creamy casserole made with tender chicken, broccoli, rice, and cheese, topped with a crunchy corn flake topping.
Ingredients
- 2 cups diced rotisserie chicken (or any other cooked chicken)
- 2 cups broccoli florets, broken down into bite-sized pieces
- 1 can cream of chicken soup
- 2 cups cooked rice
- 1 1/2 cups shredded cheese
- 1/2 cup mayonnaise
- Salt, pepper, garlic powder, onion powder (to taste)
- 1/2–3/4 cup crushed corn flakes
- 2 tbsp butter, melted
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In the baking dish, combine the chicken, broccoli, cream of chicken soup, cooked rice, shredded cheese, mayonnaise, and seasonings. Mix thoroughly.
- Evenly sprinkle the crushed corn flakes over the casserole mixture.
- Drizzle the melted butter over the corn flakes topping.
- Bake for 30 to 35 minutes, until heated through and the topping is golden and crispy.
- Remove from the oven and serve hot.
Notes
- You can substitute Greek yogurt or sour cream for mayonnaise for a lighter version.
- Use brown rice or quinoa for a healthier alternative.
- For added flavor, mix in sautéed onions or mushrooms.
- Can be made ahead and stored in the fridge for up to 2 days before baking.
