Description

A comforting and creamy casserole made with tender chicken, broccoli, rice, and cheese, topped with a crunchy corn flake topping.


Ingredients

  • 2 cups diced rotisserie chicken (or any other cooked chicken)
  • 2 cups broccoli florets, broken down into bite-sized pieces
  • 1 can cream of chicken soup
  • 2 cups cooked rice
  • 1 1/2 cups shredded cheese
  • 1/2 cup mayonnaise
  • Salt, pepper, garlic powder, onion powder (to taste)
  • 1/23/4 cup crushed corn flakes
  • 2 tbsp butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In the baking dish, combine the chicken, broccoli, cream of chicken soup, cooked rice, shredded cheese, mayonnaise, and seasonings. Mix thoroughly.
  3. Evenly sprinkle the crushed corn flakes over the casserole mixture.
  4. Drizzle the melted butter over the corn flakes topping.
  5. Bake for 30 to 35 minutes, until heated through and the topping is golden and crispy.
  6. Remove from the oven and serve hot.

Notes

  • You can substitute Greek yogurt or sour cream for mayonnaise for a lighter version.
  • Use brown rice or quinoa for a healthier alternative.
  • For added flavor, mix in sautéed onions or mushrooms.
