Description

This French Onion Galette combines all the rich, savory flavors of French onion soup—caramelized onions, Gruyère cheese, and flaky pastry—into a rustic, free-form tart. Perfect as an appetizer, side dish, or vegetarian main.


Ingredients

  • 1 sheet puff pastry, thawed
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 3 large yellow onions, thinly sliced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp sugar
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh thyme leaves
  • 1 cup shredded Gruyère cheese
  • 1 egg, beaten (for egg wash)
  • Flaky sea salt, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat butter and olive oil in a large skillet over medium heat. Add the sliced onions, salt, pepper, and sugar. Cook, stirring occasionally, until onions are deeply golden and caramelized, about 30-40 minutes.
  3. Deglaze the pan with balsamic vinegar and stir in fresh thyme. Remove from heat and let cool slightly.
  4. Roll out the puff pastry on a floured surface into a 10-12 inch round. Transfer to the prepared baking sheet.
  5. Sprinkle half of the Gruyère cheese in the center, leaving a 2-inch border. Top with caramelized onions, then the remaining cheese.
  6. Fold the edges of the pastry over the filling, pleating as needed. Brush the crust with the beaten egg.
  7. Bake for 25-30 minutes, or until the crust is golden and the cheese is bubbly.
  8. Let the galette cool slightly before slicing. Sprinkle with flaky sea salt and serve warm or at room temperature.
