Description

This Cheesy Ground Beef and Potatoes recipe is a hearty, comforting, and budget-friendly one-pan meal perfect for busy weeknights. With tender potatoes, savory ground beef, and melty cheese, it’s an easy casserole-style dish that the whole family will love. Ideal for meal prep or a quick dinner fix!

Ingredients

  • 1 lb ground beef

  • 4 cups russet potatoes, peeled and thinly sliced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 ½ cups shredded cheddar cheese

  • 1 cup milk

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

  • Chopped parsley (for garnish)

Instructions

  • Preheat oven to 375°F (190°C).

  • In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.

  • Add diced onions and garlic; sauté for 2-3 minutes until fragrant. Remove from heat.

  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to form a roux.

  • Gradually whisk in milk, cooking until the sauce thickens. Stir in salt, pepper, and paprika.

  • In a greased 9×13-inch baking dish, layer half the sliced potatoes, then half the beef mixture, and half the cheese sauce. Repeat layers.

  • Top with shredded cheddar cheese.

  • Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes or until potatoes are tender and cheese is golden.

  • Garnish with parsley and serve hot.

Notes

  • You can swap cheddar with Monterey Jack or mozzarella for a different cheese flavor.

  • For quicker prep, use pre-sliced or frozen potatoes.

  • Add vegetables like corn, green beans, or bell peppers for a more complete meal.

  • Leftovers store well in the fridge for up to 4 days.
