Description

A comforting and hearty Cheesy Meatballs and Rice Casserole made with homemade beef meatballs, tender rice, and a cheesy, creamy sauce. Perfect for a family dinner or make-ahead meal.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tbsp chopped parsley
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup mozzarella cheese
  • Salt and pepper to taste
  • Cooking spray or oil for baking dish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray or oil.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, 1/4 cup milk, salt, pepper, garlic powder, onion powder, paprika, and parsley. Mix well and form into small meatballs (about 1 inch).
  3. In a skillet over medium heat, brown the meatballs until they are seared on all sides. They do not need to be fully cooked through. Set aside.
  4. In another bowl, mix together the cooked rice, cream of mushroom soup, sour cream, 1/2 cup milk, 1 cup of cheddar cheese, and mozzarella cheese. Season with salt and pepper to taste.
  5. Spread the rice mixture evenly into the prepared baking dish.
  6. Place the browned meatballs over the rice mixture.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese on top.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove foil and bake an additional 10-15 minutes, or until the cheese is bubbly and golden and the meatballs are cooked through.
  10. Let it rest for a few minutes before serving.

Notes

  • You can prepare the meatballs ahead of time and refrigerate or freeze them until ready to use.
  • Use ground turkey or chicken for a lighter version.
  • Serve with a side salad or steamed vegetables for a complete meal.
