Description

This Cheesy Queso Beef and Rice dish is a hearty, one-pan dinner loaded with ground beef, tender rice, Tex-Mex flavors, and creamy queso cheese. It’s perfect for a quick and comforting family meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 cup white rice, uncooked
  • 2 cups beef broth
  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)
  • 1 cup corn (frozen or canned, drained)
  • 1 cup black beans, drained and rinsed
  • 1 ½ cups shredded cheddar cheese
  • 1 cup prepared queso (store-bought or homemade)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess fat if necessary.
  2. Stir in the taco seasoning and mix well to coat the beef.
  3. Add the uncooked rice, beef broth, Rotel, corn, and black beans. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 18–20 minutes, or until the rice is fully cooked and the liquid is absorbed.
  5. Remove from heat and stir in shredded cheddar cheese and prepared queso until melted and fully combined.
  6. Season with salt and pepper to taste. Garnish with chopped cilantro if desired and serve warm.
