This Cheesy Queso Beef and Rice dish is a hearty, one-pan dinner loaded with ground beef, tender rice, Tex-Mex flavors, and creamy queso cheese. It’s perfect for a quick and comforting family meal.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 cup white rice, uncooked
- 2 cups beef broth
- 1 (10 oz) can Rotel (diced tomatoes with green chiles)
- 1 cup corn (frozen or canned, drained)
- 1 cup black beans, drained and rinsed
- 1 ½ cups shredded cheddar cheese
- 1 cup prepared queso (store-bought or homemade)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft. Drain excess fat if necessary.
- Stir in the taco seasoning and mix well to coat the beef.
- Add the uncooked rice, beef broth, Rotel, corn, and black beans. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 18–20 minutes, or until the rice is fully cooked and the liquid is absorbed.
- Remove from heat and stir in shredded cheddar cheese and prepared queso until melted and fully combined.
- Season with salt and pepper to taste. Garnish with chopped cilantro if desired and serve warm.

- You can use ground turkey or chicken instead of beef for a lighter option.
- Add chopped jalapeños for extra spice.
