Description

This Cheesy Rotel Taco Beef recipe is a quick and delicious meal featuring seasoned ground beef, melted cheese, and zesty Rotel tomatoes, perfect for tacos, nachos, or over rice.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can Rotel (10 oz, diced tomatoes with green chilies)
  • 8 oz Velveeta cheese, cubed
  • 1/4 cup water

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease if needed.
  2. Add taco seasoning and 1/4 cup water to the skillet. Stir to combine and simmer for 2-3 minutes.
  3. Add the can of Rotel (undrained) to the beef mixture and stir well.
  4. Add the cubed Velveeta cheese to the skillet and stir until fully melted and the mixture is smooth.
