Description

Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 1/2 lb raw shrimp, peeled, deveined, and chopped
  • 4 oz cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley (or 1 teaspoon dried)
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped shrimp, cream cheese, mozzarella, Parmesan, mayonnaise, lemon juice, garlic, parsley, paprika, salt, and pepper. Mix until well combined.
  3. Cut a slit or pocket into the side of each salmon fillet to create space for stuffing. Be careful not to cut all the way through.
  4. Stuff each salmon fillet with the shrimp and cheese mixture.
  5. Heat olive oil in an oven-safe skillet over medium heat. Sear the salmon fillets for 2-3 minutes per side until lightly browned.
  6. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from oven, garnish with additional parsley if desired, and serve hot.

  • You can substitute mozzarella with another melty cheese like Monterey Jack or Gruyère.
