Description
These cheesy spinach quesadillas are a quick, easy, and delicious meal made with spinach, cheese, and green onion, all toasted in a golden, crispy tortilla. Perfect as a light lunch or dinner, they’re vegetarian-friendly and customizable.
Ingredients
- 1 tablespoon olive oil
- 2.5 cups baby spinach (lightly packed)
- 1 green onion, chopped
- Pinch of salt
- Pinch of freshly ground black pepper
- 4 small flour tortillas (about 7 inches each)
- 1.5 cups shredded marble cheese (or a mix of cheddar and mozzarella)
- Cooking spray or a little oil for greasing pan
Instructions
- Heat olive oil in a non-stick skillet over medium heat. Add spinach and green onion. Cook, stirring often, for 2 to 3 minutes or until spinach is wilted. Season with salt and pepper. Remove from pan and set aside.
- Wipe out the pan if necessary and lightly grease it with cooking spray or oil. Reduce heat to medium-low.
- Place a tortilla in the pan. On one half of the tortilla, evenly sprinkle about 3 tablespoons of cheese, followed by a quarter of the spinach mixture, then another 3 tablespoons of cheese. Fold the tortilla over to form a half-moon shape.
- Cook quesadilla for about 2 to 3 minutes on one side until golden and crispy, then carefully flip and cook the other side for another 2 to 3 minutes or until golden and the cheese is melted.
- Remove from pan, allow to cool slightly, then cut in half. Repeat with remaining tortillas and filling.
- Serve warm with your favorite dips like salsa, sour cream, or guacamole.
