Description

These cheesy spinach quesadillas are a quick, easy, and delicious meal made with spinach, cheese, and green onion, all toasted in a golden, crispy tortilla. Perfect as a light lunch or dinner, they’re vegetarian-friendly and customizable.


Ingredients

  • 1 tablespoon olive oil
  • 2.5 cups baby spinach (lightly packed)
  • 1 green onion, chopped
  • Pinch of salt
  • Pinch of freshly ground black pepper
  • 4 small flour tortillas (about 7 inches each)
  • 1.5 cups shredded marble cheese (or a mix of cheddar and mozzarella)
  • Cooking spray or a little oil for greasing pan

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat. Add spinach and green onion. Cook, stirring often, for 2 to 3 minutes or until spinach is wilted. Season with salt and pepper. Remove from pan and set aside.
  2. Wipe out the pan if necessary and lightly grease it with cooking spray or oil. Reduce heat to medium-low.
  3. Place a tortilla in the pan. On one half of the tortilla, evenly sprinkle about 3 tablespoons of cheese, followed by a quarter of the spinach mixture, then another 3 tablespoons of cheese. Fold the tortilla over to form a half-moon shape.
  4. Cook quesadilla for about 2 to 3 minutes on one side until golden and crispy, then carefully flip and cook the other side for another 2 to 3 minutes or until golden and the cheese is melted.
  5. Remove from pan, allow to cool slightly, then cut in half. Repeat with remaining tortillas and filling.
  6. Serve warm with your favorite dips like salsa, sour cream, or guacamole.
