Description
Cheesy Taco Potatoes are a comforting, hearty dish made with tender potatoes, seasoned taco meat, and a generous topping of melted cheese. Perfect as a main dish or a satisfying side.
Ingredients
- 4 medium russet potatoes, diced
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream (optional, for topping)
- 1/4 cup chopped green onions (optional, for garnish)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until golden and tender.
- Meanwhile, in a skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add taco seasoning and 1/2 cup water to the beef. Simmer for 5 minutes until thickened.
- Once potatoes are cooked, transfer to a baking dish. Top with taco meat and sprinkle shredded cheddar cheese evenly over the top.
- Return to oven and bake for 5-10 minutes, or until cheese is melted and bubbly.
- Remove from oven and garnish with sour cream and green onions if desired. Serve warm.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Add black beans or corn for extra texture and flavor.
- Use pepper jack cheese for a spicier twist.
