Description

Cheesy Taco Potatoes are a comforting, hearty dish made with tender potatoes, seasoned taco meat, and a generous topping of melted cheese. Perfect as a main dish or a satisfying side.


Ingredients

  • 4 medium russet potatoes, diced
  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream (optional, for topping)
  • 1/4 cup chopped green onions (optional, for garnish)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until golden and tender.
  3. Meanwhile, in a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  4. Add taco seasoning and 1/2 cup water to the beef. Simmer for 5 minutes until thickened.
  5. Once potatoes are cooked, transfer to a baking dish. Top with taco meat and sprinkle shredded cheddar cheese evenly over the top.
  6. Return to oven and bake for 5-10 minutes, or until cheese is melted and bubbly.
  7. Remove from oven and garnish with sour cream and green onions if desired. Serve warm.
