Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or coat with baking spray.
  2. In a large bowl, use a mixer to cream the softened butter and 1 1/4 cups granulated sugar together until light and fluffy, about 1 minute.
  3. Add the egg, vanilla extract, and almond extract (if using). Beat until well combined.
  4. Gradually mix in the flour, baking soda, baking powder, and salt. Mix until just combined, scraping the sides of the bowl as needed.
  5. Roll the dough into 1-inch balls, then roll each ball in the remaining 1/4 cup of sugar.
  6. Place the dough balls on the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-11 minutes, or until the cookies are set.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
