Description

These Chicken Alfredo Lasagna Roll Ups are a delicious twist on classic lasagna, made with tender lasagna noodles, shredded chicken, a creamy homemade Alfredo sauce, and plenty of cheese, all rolled up and baked to golden perfection.


Ingredients

  • 8 lasagna noodles
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups half-and-half
  • 1/2 cup chicken broth
  • 1 cup freshly grated parmesan cheese
  • 1/4 teaspoon Italian seasoning
  • Salt & pepper, to taste
  • 2 cups cooked shredded chicken
  • 1.5 cups shredded mozzarella cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and cook the lasagna noodles according to package directions. Drain and set aside on a clean towel.
  2. In a saucepan, melt butter over medium heat. Add garlic and sauté for about 30 seconds.
  3. Whisk in flour and cook for another minute to make a roux.
  4. Gradually add half-and-half and chicken broth, whisking continuously until the sauce thickens (about 5–7 minutes).
  5. Stir in parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Remove from heat.
  6. Spread a thin layer of Alfredo sauce on the bottom of a 9×13 baking dish.
  7. Lay out the noodles and spread a layer of sauce, shredded chicken, and mozzarella on each one. Roll them up and place seam-side down in the baking dish.
  8. Pour the remaining Alfredo sauce over the roll ups and top with any leftover mozzarella cheese.
  9. Bake uncovered for 25–30 minutes or until bubbly and lightly golden on top.
  10. Garnish with fresh parsley if desired and serve warm.

Notes

  • Use rotisserie chicken to save time.
  • Make the Alfredo sauce ahead of time and store in the fridge for quick assembly.
  • You can use store-bought Alfredo sauce if in a pinch.
