Description

This chicken artichoke lemon soup is hearty, comforting, and full of bright citrus flavor. Tender shredded chicken, artichokes, rice, and spinach come together in a savory broth for a cozy one-pot meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 ribs celery, diced
  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons cooking sherry
  • 1 (15-ounce) can quartered artichoke hearts, drained
  • 6 cups chicken stock
  • 1/4 cup white rice
  • 2 1/23 ounces baby spinach
  • 2 tablespoons lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the diced onion and celery and sauté for about 5 minutes, until softened.
  3. Push the vegetables to the sides of the pot and add the chicken thighs to the center. Cook for about 3 minutes to lightly brown.
  4. Add the cooking sherry and deglaze the pot, stirring the chicken and vegetables together. Cook for about 30 seconds.
  5. Add the artichoke hearts and chicken stock. Cover and bring to a boil. Once boiling, cook for 10 minutes.
  6. Stir in the white rice, cover again, and cook for another 10 minutes or until the chicken is fully cooked and easy to shred.
  7. Transfer the chicken to a cutting board and shred with two forks into bite-sized pieces.
  8. Return the shredded chicken to the pot. Stir in the lemon juice and baby spinach.
  9. Taste and adjust seasoning with salt if needed. Cook for about 3 more minutes until the spinach is wilted, then remove from heat and serve.

Notes

  • Chicken breasts can be substituted for chicken thighs if preferred.
  • For extra brightness, garnish with fresh lemon slices or parsley.
  • Store leftovers in the refrigerator for up to 3 days.
  • Brown rice can be used, but cooking time may need to be increased.
