Description

This Chicken Avocado Salad is a fresh, flavorful, and protein-packed dish featuring juicy chicken, creamy avocado, crisp vegetables, and a zesty lime-olive oil dressing. It’s perfect for lunch, dinner, or meal prep, and comes together in under 30 minutes.


Ingredients

  • 2 cooked chicken breasts, shredded or diced
  • 2 ripe avocados, peeled and diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1 cup cucumber, diced
  • 2 tablespoons fresh cilantro or parsley, chopped
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the chicken breast until fully cooked through, then let it cool and shred or dice it. Alternatively, use leftover or rotisserie chicken.
  2. Peel and dice the avocados. Slice cherry tomatoes in half. Dice the red onion and chop the cucumber.
  3. In a large mixing bowl, combine the chicken, avocado, cherry tomatoes, red onion, cucumber, and fresh herbs.
  4. Drizzle with olive oil and lime juice. Season with salt and pepper to taste.
  5. Gently toss everything together until well combined.
  6. Serve immediately or chill for later use.
