Ingredients
- 2 cooked chicken breasts, shredded or diced
- 2 ripe avocados, peeled and diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely diced
- 1 cup cucumber, diced
- 2 tablespoons fresh cilantro or parsley, chopped
- 2 tablespoons lime juice (freshly squeezed)
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the chicken breast until fully cooked through, then let it cool and shred or dice it. Alternatively, use leftover or rotisserie chicken.
- Peel and dice the avocados. Slice cherry tomatoes in half. Dice the red onion and chop the cucumber.
- In a large mixing bowl, combine the chicken, avocado, cherry tomatoes, red onion, cucumber, and fresh herbs.
- Drizzle with olive oil and lime juice. Season with salt and pepper to taste.
- Gently toss everything together until well combined.
- Serve immediately or chill for later use.
