Description

This Chicken Fajita Casserole is a flavorful, cheesy, and easy-to-make dish combining seasoned chicken, bell peppers, onions, and Mexican spices baked to perfection. A great one-pan meal perfect for busy weeknights.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, sliced into thin strips
  • 1 packet fajita seasoning mix (or homemade)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup sour cream (optional, for serving)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil.
  3. Add chicken strips and cook until browned and cooked through, about 5–7 minutes.
  4. Sprinkle fajita seasoning over the chicken and stir to coat evenly.
  5. Add sliced bell peppers and onion to the skillet and cook for another 5 minutes, until slightly softened.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. Top with shredded cheddar and Monterey Jack cheese.
  8. Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
  9. Remove from oven and let rest for 5 minutes before serving.
  10. Top with sour cream and chopped cilantro if desired.
