Ingredients
- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, sliced into thin strips
- 1 packet fajita seasoning mix (or homemade)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/4 cup sour cream (optional, for serving)
- Fresh cilantro (optional, for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, heat olive oil.
- Add chicken strips and cook until browned and cooked through, about 5–7 minutes.
- Sprinkle fajita seasoning over the chicken and stir to coat evenly.
- Add sliced bell peppers and onion to the skillet and cook for another 5 minutes, until slightly softened.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top with shredded cheddar and Monterey Jack cheese.
- Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
- Remove from oven and let rest for 5 minutes before serving.
- Top with sour cream and chopped cilantro if desired.
