Description

A classic Italian-American dish, Chicken Marsala features tender chicken breasts simmered in a rich, savory mushroom and Marsala wine sauce. Perfect for a weeknight dinner or a special occasion meal.


Ingredients

  • 4 boneless, skinless chicken breasts (about 2 lbs)
  • Salt and freshly ground black pepper
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons olive oil, divided
  • 4 tablespoons unsalted butter, divided
  • 8 oz cremini or white mushrooms, sliced
  • 3/4 cup sweet Marsala wine
  • 3/4 cup chicken broth
  • 1/4 cup heavy cream
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to an even 1/4-inch thickness using a meat mallet or rolling pin.
  2. Season both sides of the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
  3. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and cook until golden-brown on both sides and cooked through, about 4-5 minutes per side. Transfer the chicken to a plate and cover to keep warm.
  4. Add the remaining 2 tablespoons of olive oil to the same skillet. Add the mushrooms and cook until golden and their moisture has evaporated, about 5-7 minutes.
  5. Add the Marsala wine to the pan and boil for a few minutes until reduced by half, scraping any browned bits from the bottom of the pan.
  6. Stir in the chicken broth and cook for another 3 minutes.
  7. Reduce heat to low and stir in the remaining 2 tablespoons of butter and the heavy cream. Simmer gently until the sauce thickens slightly.
  8. Return the chicken to the pan and simmer for a few minutes to heat through and allow the flavors to meld.
  9. Garnish with chopped parsley if desired and serve warm.

Notes

  • For a more intense flavor, use dry Marsala wine instead of sweet.
  • Ensure the mushrooms are well browned for maximum flavor in the sauce.
  • This dish pairs well with mashed potatoes, pasta, or crusty bread.
