Ingredients
- 1 lb (450g) ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 1 small onion, grated
- 1 clove garlic, minced
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
- 2 tablespoons flour (for dusting meatballs)
- 2 tablespoons olive oil (for sauce)
- 2 tablespoons flour (for sauce)
- 1 1/2 cups chicken broth
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, egg, grated onion, minced garlic, parsley, salt, and pepper. Mix until just combined.
- Form mixture into small meatballs, about 1 inch in diameter.
- Lightly dust each meatball with flour.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Brown the meatballs on all sides until golden (they do not need to be fully cooked through). Remove and set aside.
- In the same skillet, add 2 tablespoons olive oil and 2 tablespoons flour. Stir continuously to make a roux, cooking for 1-2 minutes.
- Gradually add chicken broth while whisking to prevent lumps.
- Add lemon juice, lemon zest, salt, and pepper to the sauce. Simmer for 2-3 minutes until slightly thickened.
- Return meatballs to the skillet, cover, and cook on low heat for 15-20 minutes until meatballs are cooked through and sauce is thickened.
- Garnish with extra parsley if desired and serve warm.
Notes
- These meatballs can be made ahead and frozen before or after cooking.
- Serve with rice, mashed potatoes, or crusty bread to soak up the sauce.
- You can substitute turkey for chicken if preferred.
