Description

These Chicken Parmesan Meatballs are a delicious twist on the classic Italian dish, combining the flavors of chicken parmesan with the comfort of juicy meatballs, baked to perfection and served in a rich marinara sauce.

Ingredients

  • 1 lb ground chicken
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup Italian-style breadcrumbs
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 1 egg
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 cups marinara sauce
  • Extra shredded mozzarella and Parmesan for topping

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine the ground chicken, mozzarella, Parmesan, breadcrumbs, basil, parsley, garlic, egg, red pepper flakes, salt, and black pepper. Mix until just combined.
  3. Form the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Drizzle the meatballs with olive oil and bake for 20–25 minutes until golden and cooked through.
  5. Meanwhile, heat the marinara sauce in a skillet over medium heat.
  6. Transfer the baked meatballs into the marinara sauce and spoon the sauce over them.
  7. Top with extra shredded mozzarella and Parmesan and bake for another 5–10 minutes until the cheese is melted and bubbly.
  8. Garnish with extra herbs if desired and serve hot.

Notes

  • Use ground turkey as a substitute for chicken if preferred.
  • Great for meal prep and can be frozen for later use.
  • Serve with pasta, crusty bread, or over a bed of greens for a lighter option.
