Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs

  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 4 sandwich rolls or brioche buns
  • 1/4 cup olive oil (for frying)
  • Fresh basil leaves (optional)

Instructions

  1. Slice each chicken breast in half horizontally to create thin cutlets. Pat dry.
  2. Set up a breading station with flour in one bowl, beaten eggs in another, and a mixture of breadcrumbs, Parmesan cheese, salt, pepper, garlic powder, and oregano in a third bowl.
  3. Dredge each chicken cutlet in flour, dip into the eggs, then coat thoroughly in the breadcrumb mixture.
