Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 4 sandwich rolls or brioche buns
- 1/4 cup olive oil (for frying)

Instructions
- Slice each chicken breast in half horizontally to create thin cutlets. Pat dry.
- Set up a breading station with flour in one bowl, beaten eggs in another, and a mixture of breadcrumbs, Parmesan cheese, salt, pepper, garlic powder, and oregano in a third bowl.
- Dredge each chicken cutlet in flour, dip into the eggs, then coat thoroughly in the breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat. Fry chicken cutlets for 3 to 4 minutes per side until golden brown and cooked through.
- Preheat oven to 375°F (190°C). Place fried chicken on a baking sheet. Spoon marinara sauce over each piece and top with mozzarella cheese.
- Bake for 8 to 10 minutes until cheese is melted and bubbly.
- Toast sandwich rolls lightly. Place a chicken cutlet on each roll, garnish with fresh basil if desired, and serve warm.
