Description
This Chicken Piccata Pasta combines tender chicken, a tangy lemon butter caper sauce, and pasta for a flavorful and comforting Italian-American dish.
Ingredients
- 2 boneless skinless chicken breasts, sliced in half horizontally
- Salt and pepper to taste
- ½ cup all-purpose flour
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 4 garlic cloves, minced
- 1 cup low-sodium chicken broth
- ½ cup dry white wine
- ¼ cup fresh lemon juice (about 1–2 lemons)
- ¼ cup capers, drained
- 12 ounces pasta (such as spaghetti or linguine)
- Chopped fresh parsley, for garnish
- Freshly grated parmesan cheese, for serving
Instructions
- Cook the pasta according to package directions in salted water. Drain and set aside.
- Season the chicken cutlets with salt and pepper. Dredge them lightly in flour, shaking off the excess.
- In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Cook the chicken until golden and cooked through, about 4-5 minutes per side. Transfer to a plate and keep warm.
- In the same skillet, reduce heat to medium and add 1 tablespoon of butter. Sauté the minced garlic for about 1 minute until fragrant.
- Pour in the chicken broth and white wine, scraping up any browned bits from the pan. Stir in the lemon juice and capers. Simmer for 5-7 minutes until slightly reduced.
- Stir in the remaining 1 tablespoon of butter until melted and the sauce is slightly thickened.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Slice the cooked chicken and place on top of the pasta. Garnish with chopped parsley and grated parmesan cheese before serving.
Notes
- Use freshly squeezed lemon juice for best flavor.
- Chicken can be pounded thin for quicker and more even cooking.
- You can substitute wine with more chicken broth if preferred.
