- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
- 1 tablespoon capers, drained and rinsed

- 1/2 teaspoon freshly ground black pepper
- 1 lemon, thinly sliced

- Grill the skewers for 4 to 5 minutes per side, or until the chicken is cooked through and has nice grill marks.
- Remove from grill and serve immediately, garnished with extra parsley or lemon if desired.
Notes
- Soak wooden skewers for at least 30 minutes to prevent burning.
- Use a grill pan if outdoor grilling is not available.
- The marinade also works well as a finishing drizzle.
- For extra flavor, marinate the chicken for up to 2 hours before grilling.
