Description

These Chicken Piccata Skewers by Giada De Laurentiis offer a fun twist on the classic Italian dish. Tender chicken pieces are grilled and finished with a lemony caper sauce, perfect for appetizers or party platters.


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon capers, drained and rinsed
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 lemon, thinly sliced
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a medium bowl, whisk together the olive oil, lemon juice, parsley, capers, salt, and pepper.
  3. Thread the chicken pieces onto the skewers, alternating with slices of lemon.
  4. Brush the skewers with the prepared marinade.
  5. Grill the skewers for 4 to 5 minutes per side, or until the chicken is cooked through and has nice grill marks.
  6. Remove from grill and serve immediately, garnished with extra parsley or lemon if desired.

Notes

  • Soak wooden skewers for at least 30 minutes to prevent burning.
  • Use a grill pan if outdoor grilling is not available.
  • The marinade also works well as a finishing drizzle.
  • For extra flavor, marinate the chicken for up to 2 hours before grilling.
