Description

Ingredients

  • 1 ½ pounds boneless skinless chicken thighs
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 4 garlic cloves, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper (optional)
  • Pita bread or flatbread, for serving
  • Shredded lettuce
  • Sliced tomatoes
  • Sliced red onion
  • Dill pickles (optional)
  • Garlic sauce or tahini sauce, for serving

Instructions

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, and all spices to make the marinade.
  2. Add the chicken thighs to the bowl and coat well. Cover and marinate for at least 1 hour or overnight in the refrigerator for best flavor.
  3. Preheat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 5-6 minutes per side, or until fully cooked and nicely charred.
  4. Let the chicken rest for a few minutes, then slice into strips.
  5. Warm the pita or flatbread, then assemble the wraps by layering lettuce, tomato, red onion, pickles, sliced chicken, and a drizzle of garlic sauce or tahini.
  6. Wrap tightly and serve immediately.
