Ingredients
- 1 ½ pounds boneless skinless chicken thighs
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 4 garlic cloves, minced
- 2 teaspoons ground cumin
- 2 teaspoons smoked paprika
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon cayenne pepper (optional)
- Pita bread or flatbread, for serving
- Shredded lettuce
- Sliced tomatoes
- Sliced red onion
- Dill pickles (optional)
- Garlic sauce or tahini sauce, for serving
Instructions
- In a large bowl, combine olive oil, lemon juice, minced garlic, and all spices to make the marinade.
- Add the chicken thighs to the bowl and coat well. Cover and marinate for at least 1 hour or overnight in the refrigerator for best flavor.
- Preheat a skillet or grill pan over medium-high heat. Cook the marinated chicken for 5-6 minutes per side, or until fully cooked and nicely charred.
- Let the chicken rest for a few minutes, then slice into strips.
- Warm the pita or flatbread, then assemble the wraps by layering lettuce, tomato, red onion, pickles, sliced chicken, and a drizzle of garlic sauce or tahini.
- Wrap tightly and serve immediately.
