This Chicken, Spinach, and Mushroom Low-Carb Oven Dish is a hearty and healthy meal perfect for keto or low-carb diets. It’s loaded with flavor from tender chicken, fresh spinach, mushrooms, and cheese, all baked into a creamy, satisfying casserole.


Ingredients

  • 1 lb (450g) chicken breast, diced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and cook diced chicken with salt, pepper, garlic powder, onion powder, and paprika until no longer pink.
  3. Add sliced mushrooms and cook until softened.
  4. Stir in cream cheese and heavy cream until melted and well combined.
  5. Add fresh spinach and cook until wilted.
  6. Transfer mixture to a baking dish and top with mozzarella and Parmesan cheese.
  7. Bake for 20-25 minutes or until cheese is bubbly and golden on top.
  8. Let it cool slightly before serving.
