Ingredients
- 1 lb (450g) chicken breast, diced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup cream cheese
- 1/4 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and cook diced chicken with salt, pepper, garlic powder, onion powder, and paprika until no longer pink.
- Add sliced mushrooms and cook until softened.
- Stir in cream cheese and heavy cream until melted and well combined.
- Add fresh spinach and cook until wilted.
- Transfer mixture to a baking dish and top with mozzarella and Parmesan cheese.
- Bake for 20-25 minutes or until cheese is bubbly and golden on top.
- Let it cool slightly before serving.

- You can substitute chicken breast with chicken thighs for more flavor.
