Ingredients
- 4 large boneless skinless chicken breasts
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tbsp olive oil
- 4 oz brie cheese, sliced
- 2 cups fresh spinach, chopped
- 1/3 cup dried cranberries
- 1 tbsp balsamic vinegar
- 1/4 tsp garlic powder
- Cooking spray or extra oil for greasing
Instructions
- Preheat oven to 375°F and grease a baking dish.
- Cut a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
- Season each breast inside and out with salt, pepper, and garlic powder.
- In a bowl, combine spinach, dried cranberries, and balsamic vinegar.
- Stuff each chicken breast with brie slices and the spinach-cranberry mixture.
- Secure with toothpicks if needed to keep stuffing inside.
- Heat olive oil in a skillet over medium-high heat. Sear each stuffed chicken breast for 2-3 minutes per side until golden brown.
- Transfer seared chicken to the prepared baking dish and bake for 25-30 minutes, or until internal temperature reaches 165°F.
- Remove from oven, let rest for 5 minutes, remove toothpicks, and serve.
