Description

This flavorful Chicken Tortilla Soup is a comforting and hearty dish made with shredded chicken, fire-roasted tomatoes, black beans, corn, and warming spices. It’s perfect for a cozy dinner and can be topped with crispy tortilla strips, avocado, cheese, and more.


Ingredients

  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 jalapeño, seeded and diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1 (15 oz) can fire roasted tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 2 cups cooked, shredded chicken (about 2 chicken breasts)
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Optional toppings: avocado, shredded cheese, sour cream, tortilla strips

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, jalapeño, and garlic. Sauté for 3-5 minutes until soft and fragrant.
  2. Add cumin, chili powder, smoked paprika, oregano, salt, and pepper. Stir to combine and cook for another minute.
  3. Add diced tomatoes with green chilies, fire roasted tomatoes, black beans, corn, and chicken broth. Stir well.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 15-20 minutes.
  5. Add cooked, shredded chicken to the pot and continue to simmer for another 5-10 minutes.
  6. Stir in lime juice and adjust seasoning as needed.
  7. Serve hot with your favorite toppings like avocado, cheese, sour cream, and crispy tortilla strips. Garnish with fresh cilantro.
