Ingredients
- 4 small chicken breasts (or 2 large, halved horizontally)
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/4 cup sun-dried tomatoes, chopped (oil-packed)
- 1/4 cup dry white wine (or chicken broth)
- 3/4 cup heavy cream
- 1/4 cup grated parmesan cheese
- 1/2 tsp Italian seasoning
- 1 cup baby spinach (optional)
Instructions
- Season chicken breasts on both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side, or until golden and cooked through. Remove and set aside.
- Reduce heat to medium. Add garlic and sun-dried tomatoes to the skillet and sauté for 1 minute.
- Pour in white wine (or chicken broth) and simmer for 1-2 minutes, scraping up any browned bits from the pan.
- Stir in heavy cream, parmesan cheese, and Italian seasoning. Simmer for 2-3 minutes until slightly thickened.
- Return chicken to the skillet and simmer for another 2-3 minutes until heated through and coated in the sauce.
- Optional: Add baby spinach and stir until wilted.
- Serve hot with pasta, rice, or crusty bread.
