Description

This Chicken with Creamy Sun Dried Tomato Sauce is a quick and flavorful dish featuring tender pan-seared chicken breasts smothered in a rich, creamy sauce made with sun-dried tomatoes, garlic, and parmesan cheese. Perfect for a weeknight dinner or a special occasion meal.


Ingredients

  • 4 small chicken breasts (or 2 large, halved horizontally)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/4 cup sun-dried tomatoes, chopped (oil-packed)
  • 1/4 cup dry white wine (or chicken broth)
  • 3/4 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp Italian seasoning
  • 1 cup baby spinach (optional)

Instructions

  1. Season chicken breasts on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side, or until golden and cooked through. Remove and set aside.
  3. Reduce heat to medium. Add garlic and sun-dried tomatoes to the skillet and sauté for 1 minute.
  4. Pour in white wine (or chicken broth) and simmer for 1-2 minutes, scraping up any browned bits from the pan.
  5. Stir in heavy cream, parmesan cheese, and Italian seasoning. Simmer for 2-3 minutes until slightly thickened.
  6. Return chicken to the skillet and simmer for another 2-3 minutes until heated through and coated in the sauce.
  7. Optional: Add baby spinach and stir until wilted.
  8. Serve hot with pasta, rice, or crusty bread.
