Description
This Chicken with Creamy Sun-Dried Tomato Sauce is a rich and flavorful dish featuring tender chicken breasts smothered in a garlic-infused, sun-dried tomato cream sauce. Perfect for a comforting yet elegant meal.
Ingredients
- 2 chicken breasts , cut horizontally to make 4 steaks
- 1/2 tsp each salt and pepper
- 1/2 tsp garlic powder
- 2 tbsp olive oil
- 2 garlic cloves , finely minced
- 1/2 cup (75g) sun dried tomato strips in oil, drained
- 1/4 cup (60ml) dry white wine (or chicken broth)
- 3/4 cup (185ml) chicken broth / stock
- 3/4 cup (185ml) heavy cream (thickened cream)
- 3/4 cup (75g) parmesan, finely grated
- 1/2 tsp each salt and pepper (for sauce)
- 1 tsp cornstarch (optional, for thickening)
- Fresh basil, for garnish
Instructions
- Sprinkle both sides of chicken with salt, pepper and garlic powder.
- Heat oil in a large skillet over medium-high heat. Cook chicken for 3–4 minutes on each side or until golden and just cooked through. Remove to a plate and keep warm.
- In the same skillet, add garlic and sun-dried tomatoes. Cook for 30 seconds until fragrant.
- Pour in white wine and let it simmer rapidly for 1 minute, scraping the bottom of the pan.
- Add chicken broth and cream. Bring to a gentle simmer, stirring occasionally. Let it simmer for 3 minutes.
- Add parmesan, salt, and pepper. Stir until cheese melts. If sauce is too thin, mix cornstarch with 1 tbsp water and stir in, simmer 1 minute until thickened.
- Return chicken to the skillet and spoon sauce over. Simmer for 1–2 minutes until warmed through.
- Garnish with fresh basil and serve.
Notes
- Use oil-packed sun-dried tomatoes for best flavor.
- Chicken thighs can be substituted for breasts.
- White wine adds depth but can be replaced with chicken broth.
- Goes well with mashed potatoes, pasta, or crusty bread.
