This Easy Chili Mac Casserole is a comforting and simple one-dish meal that combines the bold flavors of chili with cheesy macaroni, baked to bubbly perfection.
Ingredients
- 1 tablespoon oil
 - 1/2 cup onion, diced
 - 1 lb ground beef
 - 1/2 teaspoon garlic powder
 - 1/2 teaspoon onion powder
 - 1/2 teaspoon salt
 - 1/2 teaspoon pepper
 - 1 can (15 oz) chili beans
 - 1 can (10 oz) diced tomatoes with green chilies
 - 1 can (8 oz) tomato sauce
 - 2 cups cooked elbow macaroni
 - 2 cups shredded cheddar cheese, divided
 
Instructions
- Preheat oven to 350 degrees F.
 - Heat oil in a large skillet over medium heat. Add diced onion and sauté until soft.
 - Add ground beef and cook until browned. Drain excess grease.
 - Season with garlic powder, onion powder, salt, and pepper. Stir to combine.
 - Add chili beans, diced tomatoes with green chilies, and tomato sauce. Mix well and simmer for a few minutes.
 - Stir in cooked macaroni and 1 cup of shredded cheddar cheese.
 - Transfer mixture to a greased 9×13 inch baking dish. Top with remaining 1 cup of shredded cheddar cheese.
 - Bake for 20–25 minutes, or until cheese is melted and casserole is heated through.
 - Let rest for 5 minutes before serving.
 
Notes
- You can use ground turkey or chicken as a substitute for ground beef.
 - Add extra veggies like bell peppers or corn for more flavor and nutrition.
 - This dish freezes well—cool completely before freezing in an airtight container.
