Ingredients
- 4 boneless, skinless chicken breasts
- 3 chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a blender or food processor, combine chipotle peppers, adobo sauce, olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper. Blend until smooth.
- Place chicken breasts in a large resealable bag or dish. Pour the marinade over the chicken, ensuring it’s well coated. Refrigerate for at least 4 hours or overnight for best flavor.
- Preheat grill or skillet over medium-high heat. Remove chicken from marinade and discard the excess marinade.
- Grill or cook chicken for 6-7 minutes per side, or until internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
- Let the chicken rest for 5 minutes before slicing or serving.
